Cinnamon Apple Cider Pancakes

I don’t really feel like Cinnamon Apple Cider Pancakes need any sort of explanation or reason for why I made them. It’s pretty obvious, right? It’s Fall and that sounds freaking delicious.

Originally I was using a recipe for regular Apple Cider Pancakes and the batter was soooo liquidy. The first 2 pancakes were pretty much crepes (and they tasted like nothing). Then I figured I’d just do my own thing, added some flour & flavor and suddenly I had a pile of perfect little pancakes that tasted like heaven with some natural maple syrup and another sprinkle of cinnamon on top.

Apologies for the terrible picture, by the way. I was having some camera and maple syrup malfunctions. Plus, I just really wanted to start eating!

 

Cinnamon Apple Cider Pancakes

2.5 cups flour
3 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-2 teaspoons Cinnamon
1/2 teaspoon Baking Spices (I used Whole Foods Winter Baking Spices)
2 eggs
1/4 cup butter, melted
1/2 cup buttermilk
1/2 cup greek yogurt
1 cup apple cider
1 teaspoon Vanilla

Mix dry ingredients together in a bowl. In a separate bowl, mix wet ingredients. Combine wet ingredients with dry and cook on a buttered griddle. Serve with maple syrup and a bit more cinnamon on top.
